Bogging down, either the Mass Air Flow Sensor or Throttle Position Sensor have gone bad.
Are you getting a check engine light?

I too had a similar problem. What gave me a clue was how the exhaust sounded while driving. Clogged Cat due to internal breakup. Gutted it and replaced the main Cat. Since then I replaced the front Y-pipe with non-pre cat Y-pipe and a straight thru center pipe and new rear Y-pipe. On the center pipe to allow the air tube to function some modification was done. I purchased a new MagnaFlow Cat for when smog needs to be done (california). Check the other mods I have done to my 87 Corvette on these pages.
