I mean, they just seem to dominate. What is it about their race car that makes them win consistently over Aston martin and Saleen?

I believe both the Corvette C5-R and C6-R are so successful at Le Mans due to several factors.  Namely, the car has a very low center of gravity, low coefficient of drag, excellent weight distribution and tends to be very reliable in the long races.  Also, the Corvette racing teams have had a lot of practice and time to learn what the car can and can not do.  Fast pit stops make a big difference also.
